Another great day today. I got up relatively early and did some work for the office, writing performance reviews and catching up on emails. We had a nice breakfast and then decadently and indulgently we went back to bed and had a big nap for another two hours. I spent the afternoon ironing, and cleaning, the regular stuff and tonight I made a great Indian meal from scratch, rice, aloo gobi (curried cauliflower and potatoes), dal malkani (dark lentils and red kidney beans). And the best to share, I created a great spinach dish. I love creamed spinach but it is too fattening and not particularly healthy but I do love it. So I sauted some garlic in a little olive oil and added a tonne of fresh baby spinach. I wilted the spinach and then added a teaspoon of stone ground, rough Dijon mustard and a scant half cup of milk to the pan. I mixed them together and simmered it really slowly stirring occasionally to keep it from sticky until the milk had mostly evaporated. At dinner, I couldn’t get enough of it. It was scrumptious. If you have a loved one that is not fussy on their greens, this was a great way to have it, and frankly I could have eaten a whole pan of it! But then what can you expect from someone whose favourite vegetable is Brussels sprouts! I love them steam, served hot with a little vinegar on them. I can eat a whole bowl happily and without guilt! I have figured out today which recipes to test and transcribe next but happily back in the race. Sunday evening, the evening of indulgent pleasures, bittersweet knowledge of a weekend ending, meals in candlelight and soft pillows, comfy couches and favourite television programs with your guy. We always try to slow down for dinner on Sunday, open some wine or have a beer, light some candles and mark the beginning of the week. Hope your evening is just as wonderful!
